IRELAND

This summer, my family decided to visit Ireland—and it turned out to be the most lovely escape. I had never been before and, truthfully, didn’t know much about the country. We did a bit of research and planned a loose itinerary, hopping from town to town.
We spent our days exploring and sprinkled in a few activities here and there, but overall the trip was incredibly relaxing and easy—which is kind of amazing considering we had two teenagers in tow. Honestly, I might be approaching the so-called teenage "devil’s den," but mine are especially sweet right now. I’m not sure what to credit for this little miracle, but I’m soaking it up while it lasts.
One of my favorite days was when we took a ferry over to Inis Oírr, one of the Aran Islands. The island was simply magical—charming and peaceful, covered in a maze of beautiful vertically stacked stone walls. The sun was out, and we explored the island on e-bikes after lunch. It was one of those perfect, sun-drenched days that I’ll never forget.

I wasn’t sure what to expect when it came to Irish cuisine—honestly I had some reservations—but the food was delicious. I found myself indulging in mussels, duck salads, and fresh veggies at every turn. Since my Hashimoto’s has flared up again, I’m back to eating gluten-free (which I really dislike). But in Ireland, that was no problem at all. It must be a regulation, but every menu lists the 14 major allergens, which made ordering so simple. I didn’t have to announce my dietary restrictions to the world—I could just choose what worked for me. It was an unexpected delight.
My favorite place we stayed was Ballynahinch Castle. It was a beautiful spot and had the loveliest service. We spent time in the barrel sauna, walking around the property and eating truly delicious food.
We finished off the trip in Dublin which was a very cool, low key city.
Overall, the weather was cool and crisp. Getting around was super easy. There were no crowds. The food was delicious. The Irish people were so kind. I loved Ireland!
